Some popular foods that are crispy in India contain sodium bicarbonate. Is sodium bicarbonate edible?

Sodium bicarbonate is just another name for baking soda, a common ingredient used for leavening in baked products.

It is also used as a digestive aid to neutralize stomach acid and even as tooth powder to enhance oral hygiene.

Since sodium bicarbonate is a form of sodium, if you are on a low-sodium diet, you will need to be aware that it adds to your total sodium intake.

In short, yes, sodium bicarbonate is edible.
